Canada has several varieties of heritage hard red spring wheats. We are featuring a variety called Ladoga which came to Canada in 1887 from Russia. It has rich, nutty flavour and is known for its digestibility. This is a great heritage wheat to try if you have a history of gluten sensitivity. Ladoga is our go to wheat for scones, pancakes, muffins, etc. It does not form the gluten structures necessary for a good bread form, though. Check out Red Fife if you'd like to make a 100% heritage wheat bread.
Sifted EX85% flour means that about half of the bran has been sifted out for lighter, but still nutritious, baked goods.
