These are Marian's chocolate oat cookies from our Open House in October. They are light and crisp and sweetened with honey. Delicious and easy!
Makes approximately 30 cookies.
Ingredients:
3 cups Scottish oats
1 cup whole grain, stoneground flour (try a heritage or ancient grain for extra tenderness)
1 tsp baking soda
2 cups chocolate chips
1/2 cup butter
1/2 cup honey
1 egg
1/4 cup warm water
Method:
Preheat the oven to 325F. Line a baking sheet with parchment paper.
Mix dry ingredients, including chocolate chips, together in a large bowl.
In a saucepan over medium heat melt butter. Remove from heat and add honey, stirring until fully blended. Whisk in egg and water. Allow to cool enough that it will not melt the chocolate chips.
Add wet ingredients to dry ingredients and stir to combine. Scoop onto the parchment lined baking sheet in heaping tablespoonfuls and then flatten slightly with a fork.
Bake for 10-15 minutes until you reach the desired golden colour.
Allow to cool on the pan for 5 minutes and then move to a wire rack to finish cooling. Enjoy!
